Creamy Chicken and Zucchini Soup with Rice


It’s January 1st again and I have to be honest, even though I feel the greatest of a clean slate, I’m not really much of a resolutions person. I love setting goals but I really live by the “just do it” mentality. Planning and resolving to do things is great but it really only gets you exactly where you are. Just do it. One foot in front of the other, starting…whenever you want to really.

So if resolutions are your thing, maybe resolve to “action” rather than discussion.  If you don’t like where you are…change it. If you don’t like what your doing…change it. If you don’t like what your eating…make this!

 

This is a family favorite soup recipe and one that keeps evolving with the years.  It’s packed with nutrition and flavor, and comes together really quickly. I love the subtle curry flavor too. It also freezers well which is totally my jam.

Creamy Chicken and Zucchini Soup with Rice

Ingredients:

1 ½ cups chopped cooked chicken (roasted or poached works well)

1 tbsp olive oil

1 small onion, chopped

1 zucchini, chopped

2 tsp fresh grated ginger

1 tsp minced garlic

3 cups fresh spinach

2 tsp (or more) Curry Powder

8 cups Chicken stock

1.5 cups rice (white or brown basmati)

1 cup milk

Salt and pepper

Directions:

  1. Heat a large pot over medium heat. Add olive oil. Add in chopped onion, chopped zucchini, ginger, garlic and curry powder. Let cook for 3 minutes or so adding a splash of water if needed.
  1. Add the chicken stock and bring to a boil. Season with a good teaspoon of salt and a pinch of pepper. Add the spinach.
  1. With a hand emersion blender or regular blender puree the soup until smooth.
  1. Bring soup back to a boil. Add the rice. Cover and simmer until rice is tender (15 minutes for white rice, 40 minutes for brown rice.)
  1. Once the rice is done, add the cooked chicken and the milk. Bring back to simmer. Add a bit more milk or water to thin if you like.
  1. Check the seasonings and add more curry power and salt if necessary.
