Chipotle Chicken Lettuce Wraps

Who love’s 15 minute meals? I do, I do!

Chipotle is a smoked chili pepper that has unique and recognizable taste all its own. To be quite honest, I never really jumped on the “chipotle everything” bandwagon because I find that the flavor is so pronounced that it really takes over all the other flavors. That my friends is the reason that this dish works. It’s all about the chipotle and the coming together of a whole bunch of super fab textures. Slightly crisped ground chicken, chewy charred roasted corn and fresh crunchy lettuce leaves. All in 15 minutes. You ready?

 

Chipotle Chicken Lettuce Wraps

(serves 4)  (adapted from bevcooks.com)

I head Butter Lettuce, leaves seperated

1 cup frozen corn

2 tbsp olive oil

1 lb ground chicken

2-3 Chipotle Peppers (I used 3 and it was SPICY HOT) from a can (in adobo)

2 tbsp of adobe sauce from the can of Chipotle

1/2 cup cilantro, chopped

Juice from 1 lime

1/2 red bell pepper, diced

3 green onions, sliced

 

1. Toss the corn in a tbsp of olive oil and spread out on a baking sheet. Throw it in the oven under the broiler for about 6 minutes or until the corn is beginner to char a little.

2. In a large skillet add the other 1 tbsp of olive oil over medium high heat. Add in your ground chicken. Break it up with a spoon and then leave it for a few minutes, Then give it a good stir and leave it some more. You want a it browned and caramelized around the edges.

3. In a food processor or blender, add your cilantro, lime juice, chipotles and adobo sauce. Blend it up.

4. Toss your sauce in with the mostly cooked chicken. Add in your charred corn and diced bell pepper. Give it a good stir and let cok for a few more minutes,.

5. Remove from heat and stir in the gren onions.

6. Serve in a big bowl with your lettuce arranged on a large platter.
